When I worked for a Christmas season at K-Mart there were customers who would deliberately try to trip you up by giving you a $10 and then later claiming they gave you a $20. We were instructed to place the bill on the till rather than inside it until we had completed the transaction.
Once, at an Indian casino, I pointed out to the cashier that she gave me $40 too much and gave the $40 back to her. She didn’t even thank me until I said “You’re welcome” and started to walk away. She then said thanks in a “oops” kind of tone. I never saw her there again.

Prelude to a “quick change” scam. It happens fast, and it can be very confusing.
I’ve been called a fool for doing this at a McDonald’s close to where I worm a few times from a few friends.
They now know me, know my order by heart, get it started while I’m in line and often upsize me with a wink.
It’s not a common thing but being an honest, decent person does sometimes reward you.
